Greek Food Festival - Nancy's Greek Salad

Another great low sodium Greek recipe posted on Johanna's blog. This time the recipe comes courtesy of Nancy Eisman. CLICK HERE to see the recipe and read about its creator, Nancy. This Greek salad has all the tasty ingredients you'd expect -- lettuce, onions, cucumbers, and a tasty olive oil dressing. But it also includes some delicious unexpected treats like grilled tomatoes, grilled eggplant and a great low sodium substitute for feta -- marinated tofu! Grilling both the tomatoes and eggplant gives this salad a real flavor boost. The marinated tofu cubes add visual appeal and another layer of delicious flavor. A little non-traditional but definitely tasty.

Jenny, I hope you followed the link to Johanna's blog and the full recipe for that delicious salad. I think the addition of grilled eggplant and tomatoes (shades of those slow roasted tomatoes you make) is great. And marinating tofu in Greek-inspired flavorings is a brilliant idea too.
