But it also includes some delicious unexpected treats like grilled tomatoes, grilled eggplant and a great low sodium substitute for feta -- marinated tofu! Grilling both the tomatoes and eggplant gives this salad a real flavor boost. The marinated tofu cubes add visual appeal and another layer of delicious flavor. A little non-traditional but definitely tasty.

Jenny, I hope you followed the link to Johanna's blog and the full recipe for that delicious salad. I think the addition of grilled eggplant and tomatoes (shades of those slow roasted tomatoes you make) is great. And marinating tofu in Greek-inspired flavorings is a brilliant idea too.
