This Greek salad has all the tasty ingredients you'd expect -- lettuce, onions, cucumbers, and a tasty olive oil dressing. But it also includes some delicious unexpected treats like grilled tomatoes, grilled eggplant and a great low sodium substitute for feta -- marinated tofu! Grilling both the tomatoes and eggplant gives this salad a real flavor boost. The marinated tofu cubes add visual appeal and another layer of delicious flavor. A little non-traditional but definitely tasty.
