I usuall...Megan, the recipe couldn't be easier. I usually double the recipe. And I've been known to sneak cold patties from the fridge as an afternoon snack. I just love these:<br /><br />Summer Squash Fritters<br /><br />2 C grated raw summer squash<br />1/2 cup baking mix (I use my low sodium homemade mix)<br />1 egg, beaten<br />1/4 - 1/2 C grated cheese (I use 1/4 C grated lower sodium Swiss)<br />Minced onion to taste (optional -- I use either freeze dried chives or fresh from my garden chopped chives)<br />1/4 - 1/2 tsp. herbs of choice (I often use dill)<br /><br />Mix all ingredients together in a bowl. Drop spoonfuls into shallow, hot oil in a frying pan. Fry until golden brown on one side. Turn and cook until golden on 2nd side.
